EXECUTIVE CHEF
Requirement:
As an Executive Chef, you are responsible for all planning, directing and organizing a team of Food & Beverage professionals to manage and operate all kitchens and stewarding in Morrissey Hotel.
With the sole aim to manage and run a high standard and profitable food & beverage operations, you will carry a “hands on” attitude in day to day operations.
Minimum Education, Experience & Other skills
Culinary qualifications:
- Previous relevant experience as an Executive Chef or a high performing sous chef in a dynamic hotel environment.
- Excellent leadership skills.
- Excellent communication skills.
- Passionate in the culinary world.
- Ability to multi task in daily duties.
- Disciplined in meeting deadlines.
- Proficiency in using computer and Microsoft office (excel and Word).
- Ability to manage food and beverage costings.
Main Duties & Responsibilities:
- Attend daily management meetings.
- Responsible for Departmental Food & Beverage financial reports.
- Aggressive in meeting monthly sales targets.
- Active in controlling costs through monitoring of kitchen purchases.
- Proactive in Morrissey Hotel’s “Save the Earth” program.
- Creating menus that meets the standards of Morrissey and exceeds the expectations of the guests.
- Manage kitchen operations including food budgeting, forecasting and waste management.
- Develop good customer relationships through proactive interaction with guests.
- Proactive in solving guests’ complaints on food quality and delivery issues
- Be available in checking Morrissey Hotel’s daily breakfast.
- Recruit, manage and train the kitchen team.
- Ensure staffing levels are sufficient to meet the daily needs of operations.
- Ensure hygiene issues are prioritized in day to day operations.
- Develop an effective maintenance plan.
